Procedure

  1. Sort the clams and throw away any that are already open and are not closing.
  2. Prepare three large bowls, add a generous amount of salt to each, and then pour cool water in two of them (use one gallon of water for every one-third cup of salt). Add water to the third bowl, but leave out the salt this time.
  3. Wash the clams and rinse them off any dirt or debris. Place the clams in the first bowl of cool, salted water for approximately 20 minutes. Shift the clams to the second dish while throwing out any that are open (and, of course, the first bowl's soiled water as well). Leave for another 20 to 30 minutes. Scrub the clams clean with a little brush before placing them in the last dish of unsalted water. Give them another 20 to 30 minutes.
